I made a batch of these cookies 'just to keep' in the pretty baking tin on our open kitchen shelves. They would be there, should company came to call, or to send with Mr Spring to enjoy at work with his afternoon tea. Unfortunately, the road to serious weight gain is paved with just such good intentions, and that road is even shorter when you work mainly at home. Problematically for my skinny jeans, no company did come to call, and poor Mr. Spring only managed to snag a few measly morals before I happened to devour the whole lot... one by one... each and every time I walked past the kitchen shelves. If my pantry had doors, or I had lots of friends popping by, or if my loved ones tended to sniff out baked goods a little bit faster, then these classic peanut butter cookies would be simply perfect.
Recipe: In a mixing bowl beat together • 1/2 cup butter, softened • 1/2 cup brown sugar • 1 large egg • 1/2 teaspoon vanilla • 1 cup crunchy natural peanut butter. Add • 1/2 teaspoon baking soda • 1/2 teaspoon baking powder • 1 1/4 cups all purpose flour • Roll dough into small balls and squish down with a fork for that classic peanut butter cookie effect!
Bake in a 375 oven (180 C ) for about 8 minutes - any longer and you'll have a batch of very crumbly cookies on your hands... and all over your lap!
