[ezcol_1third] Lately I've been finding mason jar salads particularly useful to have in my repertoire and my fridge. Obviously there're great for picnics, weekday packed lunches, and taking to Spring Shop pop-up events, but even when I'm working from home I'll often make up a couple jar salads at breakfast... it feels both productive and comforting knowing a day's worth of healthy meals are stashed away at the ready. They're a great way to use up leftovers and super quick to put together because there's no need to mix up the ingredients before hand; I just layer everything in the jar and give it a shake before eating. Here're a few of my favourite mason salad recipes...
Caprese Pasta Salad
basil pesto (homemade or store-bought) cherry tomatoes crumbled feta or torn up bits of bocconcini cooked penne pasta baby spinach leaves fresh basil
Mixed Bean and Haloumi Salad
grilled haloumi pieces cooked green beans drained canned mixed beans cherry tomatos olive oil and balsamic vinegar pinch of herbs de province
falafel balls from the supermarket tzatziki (home made or shop bought) diced tomatos diced cucumber
