You know what’s fun? Breakfast for dinner. The lovely thing about this dish is that it can be made gluten free, paleo, or vegetarian all with just a few simple tweaks. What I find completely delicious how the yolks stay all soft nestled in their little tomato houses and then turn into an oozy mess mixed up with the salty, crispy topping the second you dive in.

Vegetarian Egg House Recipe

Ingredients:

- an equal number of tomatoes and large eggs
- 1 tbs grated parmesan cheese and bread crumbs, mixed per egg
- olive oil to drizzle
- a pinch of pepper and chopped chives to taste

Directions:

1. Preheat oven to 425.
2. Cut off just the top of each tomato and with a spoon gently scoop out the insides.
3. Crack one egg in each tomato cup and bake for 20 minutes.
4. When the egg houses come out of the oven, sprinkle a tbs of the breadcrumb and parmesan mixture on top, drizzle with a few drops of olive oils, and put back in the oven to brown for a few minutes.
5. Garnish with black pepper and chives.

Paleo Egg House Recipe

Ingredients:

- an equal number of tomatoes and large eggs
- half a stripe of bacon per egg
- a pinch of pepper and chopped chives to taste

Directions:

1. Preheat oven to 425.
2. Cut off just the top of each tomato and with a spoon gently scoop out the insides.
3. Crack one egg in each tomato cup and bake for 25 minutes.
4. While the egg houses are baking, cook the bacon.
5. When the egg houses come out of the oven, crumble the cooked bacon on top. Garnish with black pepper and chives.

Tip: if you don’t like your yolks runny, add an extra 5 min to the baking time to get the Mr. Spring approved results below!
