Over the weekend I was inspired by this blog post to try out a home made granola recipe, and what a revelation! It turns out granola is so easy to make that I can’t see myself ever going for a store bought version again. Plus it makes the house smell incredible as it bakes, so the whole process of preparing and enjoying this stuff is pure pleasure from start to delicious finish. On cold mornings I can see a bowl of this granola with hot milk quickly replacing oatmeal as my favourite way to start the day, and come the warm weather it’ll be the perfect accompaniment to fresh fruit and yoghurt.
Home-Made Granola Recipe
Here’s the basic formula: 2 cups oats (not the quick cooking kind) + 1 1/2 cups nuts & seeds + 1/3 cup oil + 1/3 cup honey or maple syrup + 1/3 cup dried fruit +1/2 tsp salt + 1/2 tsp cinnamon + pinch of ground ginger + 170C (350F) oven for 40 min = Delicious granola! Yield: enough to fill two 1L mason jars.
Method: In a large bowl mix oats, nuts, seeds, oil, honey/maple syrup, salt, and spices. Spread onto an oven sheet lined with parchment paper and bake at 170C for about 40 minutes. Stir the mix around half way through to make sure all the ingredients toast evenly. Add in the dried fruit for the last 5 minutes of baking. Let cool then break up and store in an airtight jar.
For this batch I used a 1/2 cup of sunflower seeds, 1/2 cup pistachios, and a full cup of sliced almonds, macademia nut oil, honey, and a combination of sultanas and dried cranberries. Serve with warm milk or cool Greek yoghurt, fresh seasonal fruit, and my favourite final garnish of a sprinkling of chia seeds. Enjoy! And let me know what combinations you come up with!
