Peanut butter banana bread is all about two flavours that go together so well… and putting them to work in cake form. I love the toothy texture that natural crunchy peanut butter adds to this classic banana bread recipe. It’s the perfect way to turn the saddest bananas at the bottom of the fruit bowl into something extra delicious and hearty for afternoon tea. This cake also freezes well in individually wrapped slices. So if you don’t eat the whole loaf fresh out of the oven, stash it away for the next time company calls or you need to pack a quick snack.
Peanut Butter Banana Bread Recipe
{adapted from Donna Hay}
Ingredients: 1/3 cup softened butter • 3/4 cup brown sugar • 1 tsp vanilla extract • 2 eggs • 2 cups mashed bananas • 13/4 cups plain flour • 1 tsp baking powder • 1 tsp baking soda • 1tsp cinnamon •1/2 cup peanut butter
1. Preheat oven to 160C (325F)
2. Beat butter, sugar, and vanilla until pale and creamy. 8-10 minutes in an electric mixer is ideal.
3. Add eggs and beat well to combine.
4. Add bananas, peanut butter, and sift in flour, baking soda, baking powder and cinnamon. Stir to combine.
5. Spoon mixture into a greased loaf tin and bake for 60-65 minutes until a skewer comes out clean. Cool in the tin for 20 minutes before turning out onto a wire rack to cool completely.
